Caramel Icing from Uncle Lou's Southern Kitchen

Yield Makes 2 1/2 cups
As caramel icings go, this far-from-ornery one is decidedly easy to prepare.


  • 1 3/4 cups powdered sugar
  • 1/2 cup salted butter
  • 1/2 cup unsalted butter
  • 1 cup firmly packed light brown sugar
  • 6 tablespoons heavy cream
  • 1 1/2 teaspoons vanilla extract

How to Make It

  1. Place powdered sugar in a large bowl. Melt salted and unsalted butter in a small saucepan over low heat. Add brown sugar and cream, whisking until all lumps are dissolved. Bring to a boil over medium heat. Remove from heat; stir in vanilla.

  2. Pour hot butter-cream mixture into powdered sugar; beat at high speed with an electric mixer 2 minutes or until blended. Cool 1 hour, stirring occasionally.
