These BLT-meets-breakfast sandwiches are just about everything you could hope for in a brunch entree. Offering a perfect balance of savory and sweet, these hearty sandwiches, using maple-flavored waffles as the “bread,” are sure to wow family and friends. Set up all of your sandwich components and condiments buffet-style and allow company to assemble their own just as they like.
MAPLE WAFFLE BATTER
2 cups baking mix (such as Bisquick)
1 1/2 cups whole milk
2 Tbsp. canola oil
1 large egg
2 Tbsp. pure maple syrup
3 center-cut bacon slices, cut in half
1/2 cup Maple Waffle Batter (recipe above)
2 large eggs, slightly beaten
1/4 tsp. kosher salt
1/8 tsp. black pepper
1 havarti cheese slice
1 Tbsp. mayonnaise
1 tsp. Dijon mustard
1/4 cup baby arugula
1/2 plum tomato, sliced
How to Make It
Combine all Maple Waffle Batter ingredients in a medium bowl, and whisk to combine. Mixture will be slightly lumpy.
Preheat Belgian waffle maker to medium-high setting. Lightly coat with cooking spray.
Place bacon on 2 sections of waffle iron. Pour 1/4 cup of the Maple Waffle Batter in each of 2 remaining waffle iron sections. Close waffle maker, and cook until waffles are done, about 3 minutes; transfer waffles to a wire rack. Flip bacon. Pour eggs into 2 empty waffle sections, sprinkle with salt and pepper, and close waffle maker. Cook until eggs and bacon are cooked through, 1 to 2 mintues. Transfer egg sections to a plate, and place cheese slice in between to melt. Transfer bacon to a plate lined with a paper towel. (If desired, cook bacon 1 to 2 more minutes to get extra crispy.)
Combine mayonnaise and mustard in a small bowl. Spread mayo mixture on each waffle. Top one waffle with arugula, cheesy eggs, tomato slices, bacon. Top with second waffle, sauce side down. Serve immediately.
