Steak Salad With Roasted Red Pepper Relish

  • 1.5 lbs skirt steak, cut into 4 pieces


  1. 2 tablespoons plus 1 teaspoon olive oil
  2. 1 1/2 pounds skirt steak, cut into 4 pieces
  3. kosher salt and black pepper
  4. 1/2 cup chopped roasted red peppers
  5. 2 scallions, thinly sliced
  6. 2 tablespoons red wine vinegar
  7. 1 tablespoon chopped fresh flat-leaf parsley
  8. 5 ounces mixed greens (about 6 cups)
  9. Directions
  10. Heat 1 teaspoon of the oil in a large skillet over medium-high heat. Season the steak with ½ teaspoon salt and ¼ teaspoon black pepper and cook, 3 to 5 minutes per side for medium-rare. Let rest for 5 minutes before slicing.
  11. Meanwhile, in a small bowl, mix together the roasted red peppers, scallions, vinegar, parsley, the remaining 2 tablespoons of oil, and ¼ teaspoon each salt and black pepper.
  12. Serve the steak and greens topped with the red pepper relish.
