Not only are these s'mores patriotic, they are customizable. We like having a mix of chocolate bars on hand so guests have a choice. In addition to Norway's Freia milk chocolate, you could also try Ghirardelli dark chocolate with caramel, Ritter Sport praline, and Perugina cappuccino.

  • 1.5 cup(s) all-purpose flour
  • 1 cup(s) whole-wheat flour
  • 0.5 cup(s) toasted wheat germ
  • 0.5 teaspoon(s) salt
  • 1 teaspoon(s) baking soda
  • 2 stick(s) butter softened
  • 1 teaspoon(s) ground cinnamon
  • 0.25 cup(s) light brown sugar packed
  • 2 tablespoon(s) honey
  • 8 ounce(s) chocolate broken into small pieces
  • 16 clean twigs or skewers
  • 32 marshmallows


  1. 1. Cookies: Whisk together
  2. flours, wheat germ, salt, baking
  3. soda, and cinnamon.
  4. 2. Beat together butter, sugar,
  5. and honey with a mixer on medium
  6. speed until pale and fluffy,
  7. 2 to 3 minutes, scraping down
  8. sides of bowl as needed. Reduce
  9. speed to low. Add flour mixture;
  10. beat until combined.
  11. 3. Turn out dough onto a floured
  12. surface, and divide in half. Roll
  13. out each dough half to 'Is-inch
  14. thickness, and refrigerate until
  15. firm, about 10 minutes. Preheat
  16. oven to 350°. Cut out squares
  17. with a 3-inch fluted square cutter.
  18. Cut a star out of the center of
  19. half the cookies using a 1112-inch
  20. star cutter. Reroll scraps once,
  21. and repeat.
  22. 4. Place squares 1 inch apart on
  23. parchment-lined baking sheets,
  24. keeping cookies with cutouts
  25. together. Refrigerate until very
  26. firm, about 15 minutes.
  27. 5. Bake cookies until dark brown,
  28. 14 to 16 minutes, rotating halfway
  29. through (star cookies take
  30. about 1 minute less). Let cool
  31. on sheets 10 minutes. Cookies
  32. can be stored in an airtight container
  33. up to 2 days.
  34. 6. S'mores: Preheat grill on high
  35. (if using a charcoal grill, coals
  36. are ready when you can hold your
  37. hand 5 inches above grill for
  38. just 2 seconds) or build a campfire.
  39. Divide chocolate among
  40. cookies without cutouts. Skewer
  41. marshmallows; toast over grill
  42. or fire, rotating, until gooey in
  43. center and nicely charred, about
  44. 2 minutes. Remove marshmallows
  45. from skewers; place 2 on
  46. each chocolate-topped cookie.
  47. Sandwich each with a cutout
  48. star cookie; press gently. Let sit
  49. 2 minute to melt chocolate.
