  • 16 oz. cooked black beans
  • 16 oz. fresh or frozen corn kernels
  • cup chopped fresh cilantro
  • cup chopped green onion
  • cup chopped red onion
  • 1/3 cup fresh lime juice (approximately 3 limes)
  • 3 TBSP olive oil
  • 1 TBSP ground cumin
  • tsp cayenne pepper (more or less depending on how spicy you want)
  • cup chopped tomatoes (or canned diced tomatoes)


  1. In large bowl, combine beans, corn, cilantro green onions, red onions, lime juice, olive oil, cumin & cayenne pepper. Mix together then taste. Add salt & pepper as needed. Cover & chill at least two hours for flavors to blend. Chilling overnight is even better. Just before serving, stir well, then add in chopped tomatoes. Serve with blue or white corn tortilla chips
