  • 4 cup(s) Cooked SooFoo
  • 1 clove(s) Garlic
  • 1 can(s) Black bean
  • 1 can(s) Kidney beans
  • 1/2 cup(s) Zucchinni
  • 1/2 cup(s) Squash
  • 1 can(s) Diced Tomatoes
  • 1 Bell Pepper
  • 1/2 Half Onion
  • 1/2 teaspoon(s) Salt
  • 1/2 teaspoon(s) Pepper
  • 2 tablespoon(s) Olive Oil
  • 1/4 cup(s) Vegetable Broth
  • 2 tablespoon(s) Chili Powder


  1. Prep-time: 40min
  2. Serves: 6-8
  3. Ingredients
  4. 4 cups, cooked SooFoo (1-1/2 cups uncooked and made to package directions)
  5. 1 clove of garlic
  6. 1 can black beans
  7. 1 can kidney beans
  8. 1/2 cup of zucchini
  9. 1/2 cup of squash
  10. 1 can diced tomatoes (large 28oz)
  11. 1/2 onion, diced
  12. 1 bell pepper, diced
  13. 1/2 tsp salt
  14. 1/2 tsp pepper
  15. 2 tbsp olive oil
  16. 1/4 cup vegetable broth (or Imagine Brand: "No chicken broth")
  17. 2 tbsp chili powder
  18. Instructions
  19. In a large pot... saute the squash, zucchini, onion, bell pepper and garlic in the olive oil.
  20. Add in the tomatoes, vegetable broth and chili powder after. Stir together.
  21. After a while, lower to medium heat and add in the beans and the SooFoo.
  22. You should cook for 20mins and stir occasionally.

  23. SooFoo is completely organic and it has nine ingredients. Seems like a lot for “rice” type of food until you read them: long grain brown rice, brown lentils, wheat berries, oats, barley, black lentils, rye berries, green lentils, and buckwheat. The folks at SooFoo must’ve been big proponents of Raffi’s “Oats and Beans and Barely.”
  24. Certified organic, Kosher, and vegan. You can buy it bulk at Whole foods, Sprouts, Mothers, and other natural food stores, enjoy !
