  1. What a great dish for one of those nights when your kids have a late soccer game! Brown the meat, layer in the ingredients, set your slow cooker on low, and go!

  5. Ingredients

  6. 1 pound ground beef, 96% lean
  7. 1⁄4 tsp red pepper flakes
  8. 2 tsp dried thyme
  9. One 24-ounce jar low-sodium marinara
  10. sauce
  11. One 3⁄4-pound eggplant, unpeeled, diced

  12. (2 cups)
  13. 15 ounces part-skim ricotta cheese
  14. 1 cup shredded Italian five-cheese blend
  15. (see Note)
  16. 1⁄4 cup egg substitute (or 1 egg white)
  17. 1 tbsp chopped fresh parsley
  18. 6 no-boil lasagna noodles

  21. **Please note that the cooking time should not exceed 4 hours. This is not an “all day” slow-cooker meal.**

  22. Directions

  23. 1. In a skillet over moderate heat, brown the
  24. ground beef and drain any excess fat. Stir in red
  25. pepper flakes, thyme, tomato sauce, eggplant,
  26. and 1 1⁄4 cup water.
  27. 2. In a mixing bowl, combine the ricotta, shredded
  28. cheese blend, egg substitute, and parsley.
  29. 3. Coat the inside of the slow cooker with nonstick
  30. cooking spray. Place enough meat sauce
  31. in the slow cooker to cover the bottom. Top
  32. with 2 or 3 lasagna noodles (break them up as
  33. needed) to cover the meat sauce. Repeat layer.
  34. 4. Top the second layer with all of the cheese
  35. mixture and finish with a top layer of the remaining
  36. meat sauce.
  37. 5. Cover and set the slow cooker on low. Cook
  38. for 3 1⁄2 to 4 hours.
  39. **Please note that the cooking time should not exceed 4 hours. This is not an “all day” slow-cooker meal.**
  40. Note: If you can’t find the Italian five-cheese
  41. blend, shredded part-skim mozzarella will work
  42. just fine.
