  • 2 clove(s) garlic, minced
  • 0.33 cup(s) grated parmesan
  • 16 large white mushrooms
  • 2.5 tablespoon(s) marsala wine or sherry
  • 5 ounce(s) mascarpone cheese
  • 2.5 tablespoon(s) minced flat-leaf parsley
  • 5 tablespoon(s) olive oil
  • 0.66 cup(s) panko
  • 0.5 teaspoon(s) pepper
  • 1 teaspoon(s) salt
  • 0.75 pound(s) sausage
  • 6 scallions, white and green parts finely chopped


  1. 1. heat oven to 325
  2. 2. separate mushroom caps and stems; put caps in a bowl with 3 tbsp oil and marsala/sherry and set aside
  3. 3. cook sausage over medium heat until browned
  4. 4. add chopped mushroom stems and cook 2-3 min
  5. 5. add scallions, garlic, salt, pepper and cook 2-3 min
  6. 6. stir in panko and mascarpone until creamy; remove from heat
  7. 7. add parmesan and parsley; season to taste
  8. 8. place mushroom caps in shallow baking dish; fill with sausage mixture; bake 45 min
