Saturday Morning Pancakes

These pancakes hold a special place in my heart (if that's possible for food to do). My Mom made these every Saturday morning and it was typically the only time the whole family could come together to eat, talk, and enjoy some delicious flap jacks. Typically dished up with some homemade preserves, these do just fine with syrup and butter. Feel free to sprinkle some chocolate chips in if you're feeling adventurous. But in the end, I hope they make your Saturday morning as bright as they did mine.

  • 1 cup(s) flour
  • 2 teaspoon(s) [white] sugar
  • 1/2 teaspoon(s) salt
  • 1/2 teaspoon(s) baking soda
  • 1/2 teaspoon(s) baking powder
  • 3/4 cup(s) buttermilk (substitute w/ 3/4 2% milk and 1 tbsp white wine vinegar)
  • 1/4 cup(s) milk
  • 1 large egg separated
  • 1 tablespoon(s) butter melted


  1. Heat griddle to 200 degrees (medium setting) or pan

  2. Combine flour, sugar, salt, baking soda, baking powder in a bowl, set aside.

  3. In separate bowl, combine buttermilk, milk, and egg white. mix well

  4. In third bowl, combine egg yolk with melted butter.

  5. Starting with the milk mixture, add to dry ingredients, mixing in a little bit at a time and breaking up any flour lumps. Finally, add butter mixture.

  6. Use approx. 1/4 Cup mixture for each pancake, allowing each side to cook 1-2 minutes per side or until a light golden color. Enjoy :)
