  1. Brine chicken.

  2. Mix 1/4 cup kosher salt in 4 cups water, pour over bird and refrigerate 4-12 hours. Remove and pat try to taste.

  3. Roast in 350 oven for 20 minutes, baste with 1/2 cup Cahill Prickly Pear Syrup. Roast another 40 minutes, basting 2-3 times. Watch for burning.
