Pumpkin Cobbler

  • 29 Oz can pumpkin beaten
  • 4 large eggs
  • 1 1/2 cup sugar
  • 1 tsp. salt
  • 1 tsp. ginger
  • 1/2 tsp cloves
  • 2 tsp. cinnamon
  • 13 oz can evaporated milk
  • 1 yellow cake mix
  • 1 cup butter melted
  • 2 tbsp. brown sugar
  • 1/2 cup walnuts chopped


  1. Blend together pumpkin, eggs, sugar, salt, ginger, cloves, cinnamon and milk. Pour into greased 13-by-9-by-2-inch pan. Sprinkle dry cake mix over top of mixture( it seems like a lot of cake mix but it works). Drizzle melted butter over dry cake mix, then top with brown sugar and chopped nuts. Bake in a 350-degree oven for one hour and 20 minutes.
