  • 3 eggs beaten on high for 5 minutes
  • 1 cup(s) sugar add gradually
  • 2/3 cup(s) pumpkin
  • 1 teaspoon(s) lemon juice
  • 3/4 cup(s) flour
  • 1 teaspoon(s) cinnamon
  • 1/2 teaspoon(s) ginger
  • 1/4 teaspoon(s) nutmeg
  • 1/2 teaspoon(s) salt
  • 1 teaspoon(s) baking powder
  • filling
  • 1 cup(s) powdered sugar
  • 4 tablespoon(s) butter
  • 1/2 teaspoon(s) vanilla
  • 2 package(s) (3 oz) cream cheese


  1. Stir in pumpkin and lemon juice. Add dry ingredients. Spread on jelly roll pan. Bake 15 minutes at 350º. Turn out on powdered sugar towel Roll up. Cool, unroll spread filling on then roll back up.
