  1. Pineapple cookies

  2. 1 cup butter
  3. 1 cup brown sugar
  4. 1 cup white sugar
  5. 2 eggs
  6. 20 oz can crushed pineapple, drained and juice reserved
  7. 1 tsp. Vanilla
  8. 4 cups flour
  9. 1/2 tsp. Salt
  10. 1 1/2 tsp. Baking soda
  11. 1/2 tsp. Baking powder
  12. For the icing:
  13. Reserved pineapple juice
  14. 2 cups powdered sugar
  15. In a mixer bowl cream the butter with the sugars. Add the eggs, pineapple
  16. and
  17. Vanilla. In a large bowl, combine the dry ingredients. Blend into the wet
  18. Ingredients. Drop by teaspoonful onto a greased cookie sheet. Bake at 400
  19. Degrees for 8-10 minutes.
  20. For the icing: Gradually add pineapple juice to the powdered sugar by the
  21. Tablespoon. You want the consistency to be a bit thick, but still stream
  22. off
  23. The spoon. While the cookies are still warm, spread the icing on the tops.
  24. This recipe makes about 8 dozen soft, delicious cookies.
