Panzanella with Tuna

  • Salad


  1. Arugula - as much as you like
  2. Tuna (canned) -- as much as you like
  3. 1 loaf French bread cut into cubes

  4. 4 c. chopped tomato
  5. 1 c. red bell pepper
  6. 1/2 c. red onion sliced
  7. 1/4 c. fresh basil
  8. 2 garlic cloves
  9. 1 /4 t. black pepper
  10. 1/2 t. salt
  11. 2 t. olive oil
  12. 3 T. balsamic
  13. Parmesan - as much as like

  14. Cut French bread into cubes; toss in olive oil, sprinkle with garlic salt/powder. Bake in oven at 400 degrees until crisp (turning once or twice)

  15. Combine rest of ingredients in a bowl and toss to coat. Add cooked croutons and serve.
