Pan Seared Tuna With Brown Butter Caper Sauce

Recipe from Harris Teeter's Fresh Catch Newsletter Did you ever wonder where the word "Ahi" came from? Ahi is the word for "fire" in the Hawaiian language. Long ago the Hawaiians would fish in their wooden canoes for the Great Ahi Tuna. When a Tuna was caught, the gunwales of the canoe would smoke. This was caused by the rope rubbing violently along the sides (gunwales) of their canoes when the fish was caught and they had to pull them in.

  • 4 8-ounce tuna steaks
  • 2 tablespoon(s) extra virgin olive oil
  • Kosher salt to taste
  • Ground black pepper
  • 1/4 stick(s) butter
  • 1/4 cup(s) capers, rinsed and drained
  • 1/2 fresh lemon


  1. 1. In a large sauté pan, melt the butter over medium-high heat.
  2. 2. Add the rinsed and drained capers and set aside off the heat.
  3. 3. Coat each side of the tuna steaks with olive oil, kosher salt and pepper.
  4. 4. Place the tuna steaks on preheated grill at medium-high heat.
  5. 5. Grill for one and a half to two minutes on each side.
  6. 6. Heat the sauce on medium and squeeze the lemon into the sauce..
  7. 7. Plate the tuna steaks and spoon the sauce over the tuna steaks and serve.
