Pan Seared Flounder with Rosemary and Garlic

  • 1 1/2 tablespoon(s) olive oil
  • 3 large garlic cloves
  • 4 rosemary sprigs
  • 4 6 oz flounder filets
  • 1/4 teaspoon(s) salt
  • 1/4 teaspoon(s) pepper
  • 1/4 teaspoon(s) paprika


  1. Heat oil in a large nonstick skillet over medium heat. Add garlic and rosemary. Cook 3 mins or until garlic is browned and rosemary is crisp. Using a slotted spoon, transfer garlic and rosemary to paper towels, reserving oil in pan.
  2. Return oil to medium-high heat. Sprinkle fish evenly with salt, pepper and paprika. Cook fish in hot oil 3 minutes on each side or until desired degree of doneness. Divide fish evenly among 4 plates. Top with reserved garlic and rosemary, serve with lemon wedges if desired.
