  • 1/4 cup(s) olive oil
  • 5 clove(s) Garlic Minced
  • 2 Onions Chopped
  • 4 stalk(s) celery OR celery seed ok Chopped
  • 2 Carrots Chopped
  • 10 ounce(s) Swiss chard or kale Cut in strips
  • 1/2 head(s) Small cabbage Shredded
  • 3 Potatoes (medium) Peeled and cubed
  • 28 ounce(s) diced tomatoes
  • 2 cup(s) Bullion or stock - beef is best
  • 1 parmesan cheese rind
  • 15 ounce(s) cannellini beans or white beans
  • 1/2 cup(s) Orecchiette or orzo
  • Basil oregano salt pepper to taste


  1. Sauté in olive oil the garlic, onions, celery, and carrots until onions are translucent

  2. Add chard/kale, cabbage, potatoes, tomatoes, stock and cheese rind. Simmer 3 hours. You will need to add more liquid

  3. Add beans, pasta, and seasonings

  4. Serve topped with Parmesan and/or olive oil
