  • 1 bag lentils (rinse many times)
  • 1 bay leaf
  • 1 box frozen spinach
  • 1 large can of tomato paste
  • 1 large onion
  • 1/3 cup olive oil
  • 2 garlic cloves
  • 6 chopped celery stalks
  • 8 chopped carrots
  • 9 cups water
  • Italian seasoning
  • salt & pepper


  1. Boil the lentils, garlic cloves, bay leaf, water, and olive oil for one hour.

  2. Add the rest of ingredients until veg. are soft.
