  • 1 cup(s) celery
  • 2/3 cup(s) Onion
  • 1 clove(s) Garlic
  • 1 tablespoon(s) canola oil
  • 16 ounce(s) Black eyed peas
  • 3/4 pound(s) Diced ham
  • 2 1/4 cup(s) chicken broth
  • 1/4 teaspoon(s) Crushed red pepper
  • 1 piece(s) Bay leaf
  • 1 cup(s) Uncooked rice
  • Freshly ground pepper


  1. Garnish: celery leaves

  2. Cook first 4 ngredients in hot oil in a dutch oven over medium heat stirring constantly, until tender. Stir in peas and next 4 ingredients. Bring to boil; cover, reduce heat, and simmer 30 minutes. Stir in rice; cover and cook 20-25 minutes or until liquid is absorbed and rice is tender. Discard bay leaf before serving. Sprinkle with freshly ground pepper.
