Hearty Oat Loaf

  • 2 c all-purpose flour
  • 1 c whole wheat flour
  • 1/2 c plus 2 tbsp quick-cooking oats, divided
  • 1/8 c sugar (or less)
  • 3 tsp baking powder
  • 1/4 tsp salt (or less)
  • 1 egg
  • 1-1/2 c fat-free milk
  • 3 tbsp canola oil


  1. Preheat oven to 350.

  2. In a large bowl, combine the flours, 1/2 c oats, sugar, baking powder and salt.

  3. In another bowl, combien the egg, milk and oil; stir into dry ingredients just until moistened.

  4. Spread batter into an 8- or 9-in round baking pan coated with non-stick cooking spray. Sprinkle with remaining oats.

  5. Bake at 350 for 40-50 min or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.
