Golden Sweet Cornbread
- 1 cup flour
- 1 cup yellow cornmeal
- 1/2 cup sugar
- 1 tsp salt
- 3 1/2 tsp baking powder
- 1 egg
- 1 cup milk
- 1/3 cup veg. oil
- 1. Preheat oven to 400 degrees F. Spray muffin tins with Pam.
- 2. In a large bowl, combine flour, cornmeal, sugar, salt and baking powder.
- 3. Lightly beat egg and add to milk and oil. Pour wet ingredients into dry and mix til just combined. Let the mixture sit for about 3 minutes.
- 4. Spoon into muffin tins and bake in preheated oven for about 2025 minutes.
- 5. While nice and hot, spread with honey butter (Just combine about 2 Tbsp of honey with 1 stick of softened butter.)
