  • 1 cup(s) part skim ricotta cheese
  • 1 pound(s) frozen chopped spinach thawed and drained
  • 4 eggs
  • 1/4 teaspoon(s) nutmeg
  • 1 teaspoon(s) salt
  • 5 tablespoon(s) flour
  • 1 cup(s) parmesan grated
  • marinara sauce


  1. Mix all ingredients until well blended. Form into patties and place on a greased baking sheet. Spray tops with pam. Bake at 500 degrees for 15 minutes, turning once halfway through baking time. Top each gnudi with marinara sauce.
