German Potato Salad--Joe's mom's recipe

I usually double, slightly undercook potatoes and simmer in crock pot for several hours. ***Cook's Illustrated tip--add 2 Tbl cider vinegar/qt of water when cooking potatoes to prevent mushiness. Works great!!

  • Hot Bacon Dressing
  • 5 slice(s) bacon fried crisp
  • 3/5 cup(s) onion chopped
  • 2 tablespoon(s) all-purpose flour
  • 2/3 cup(s) cider vingar
  • 1-1/3 cup(s) water
  • 1/4 cup(s) sugar
  • 1 teaspoon(s) salt
  • 1/8 teaspoon(s) pepper
  • Potatoes
  • 2-1/2 pound(s) sliced red potatoes
  • 2 tablespoon(s) cider vinegar per qt of water


  1. Bring potato water to boil w/vinegar (keep potatoes from breaking down when cooked and stirred) til fork tender

  2. Fry bacon in large skillet til crisp. Remove, reserve 2-3T dripping. Cook onion until tender. Add flour, cook until not raw. Add vinegar and water stirring til bubbly and slightly thickened. Add sugar, salt and pepper. Simmer 10 min, stir in crumbled bacon. Add potatoes. Mix lightly.
