  • 1 egg beaten
  • 3/4 cup(s) whole wheat bread crumbs
  • 6 slice(s) mozerella
  • grated parmesan
  • 1 pint(s) ricotta cheese
  • 1 pint(s) mushrooms sliced
  • 2 pound(s) broccoli
  • marinara
  • 6 lrg tomatoes chopped or 28oz can crushed tomatoes
  • 1 teaspoon(s) garlic
  • 1 teaspoon(s) oregano
  • 1 teaspoon(s) salt
  • 1 tablespoon(s) olive oil
  • 1 small onion chopped
  • 1 teaspoon(s) chopped basil
  • 1/8 teaspoon(s) crushed red pepper


  1. pelled slice eggplant 1 in thick dip in eggsplant bread and egg again place on baking sheet 400 dgrees x 25min preheat 500 degrees place eggplant in a baking dish 1/2 cup marinara scoop of ricotta, sprinkle with parmesan, slice of mozzarella, place broccoli, and mushroom around eggplant, place in oven 500 degrees x 15min, bake until melted and begins to brown
