Crunchy Baked Coconut Shrimp with Citrus Mustard Dipping Sauce

  • 2 pound(s) Shrimp Shelled and deveined with tails on
  • 1 1/2 cup(s) Sweetened Coconut
  • 1/2 cup(s) cornstarch
  • 1 teaspoon(s) Cajun seasoning
  • 2 Egg whites Beaten lightly with a little bit of water
  • 1 cup(s) Orange marmalade
  • 1/2 cup(s) mayonnaise
  • 2 tablespoon(s) Grainy mustard
  • 1 teaspoon(s) Cajun seasoning


  1. Preheat oven to 400 degrees. Spray baking sheet with non-stick cooking spray.
  2. Prepare breading station: egg white, cornstarch with Cajun seasoning and coconut. Dip shrimp into egg, then cornstarch, and finally press into coconut. Place on backing sheet. Bake for 10 minutes, carefully flip and bake for 2 more.

  3. Prepare dipping sauce by stirring finally four ingredients together, add a little water if needed.
