  1. Crockpot Chicken Bites

  2. 1-2 lbs. boneless, skinless chicken thighs
  3. 1 large onion, chopped
  4. 2 bell peppers, 1 red, 1 green, chopped
  5. 1/4 cup chicken broth
  6. Cracked black pepper to taste
  7. 1 cup barbecue sauce
  8. 1 cup Monterrey Jack cheese, shredded

  9. Place onion and bell peppers in crockpot and top with chicken thighs.
  10. Pour chicken broth over chicken. Season with cracked black pepper and
  11. cook on
  12. Low for 6-8 hours. At the end of cooking time, drain liquid from pot and
  13. shred chicken.
  14. Return chicken to the crockpot and mix in barbecue sauce. Cook another
  15. 30 minutes.
  16. Spoon mixture into split dinner rolls and top with shredded Monterrey
  17. Jack cheese.
