Cold Curry Rice Salad

  • 1 package(s) chicken flavored rice mix
  • 2 green onions sliced
  • 1/2 green pepper chopped
  • 2 jar(s) marinated artichoke hearts
  • 1/2 teaspoon(s) curry powder
  • 1/3 cup(s) mayonnaise


  1. Cook rice as directed (omit butter). Cool. Add onions, green peppers. Drain artichokes and retain 1/2 of marinate. Chop artichokes and add to rice mixture. Combine reserved marinate with curry powder and mayonnaise. Mix all ingredients and chill before serving.
