Chicken with Rice
Cool: 3 Minutes
- 1/4c EV Olive oil
- 1/3c Red sauce
- 1 chicken (in parts)1ts Saffron (powdered)
- 2 Small shallots chopped
- 2 1/2 c broth
- 1clove garlic
- 1 c Uncooked rice
- Heat oil, saut chicken on both sides. Add onion and
- garlic, then add tomato sauce, salt and pepper, saffron added to in chicken broth,
- Cover and cook for 15 minutes. Add rice, cover and simmer for 20 minutes or
- until chicken is tender.
