  • 2 can(s) Rotel chopped tomatos with green chilis mild
  • 1 can(s) chopped green chilies
  • 1 pound(s) boneless chicken breasts cooked and cut into bite size pieces
  • 1 onion chopped
  • 1 bulb(s) garlic peeled and minced
  • 6 cup(s) chicken broth
  • 2 cup(s) cooked rice (Mexican ready rice)
  • 1 bunch(es) cilantro
  • 1 avocado peeled and cut into bite size pieces
  • 1 lime


  1. combine chicken broth, onion, garlic and simmer for 15 minutes
  2. add rotel tomatos, green chillis, and rice
  3. simmer for 15 minutes
  4. add cooked chicken
  5. simmer for another 10 minutes
  6. serve in bowls and add cilantro,avocado and lime juice to taste in individual servings
