Broccoli spinach & onion soup

  • 3 large onions
  • 1 1/2 pound(s) broccoli stem and florets
  • 4 med potatoes approx 1 pd
  • 6 can(s) chicken broth (14.5oz)
  • 1 pound(s) fresh spinach
  • 2-4 tablespoon(s) butter
  • salt to taste


  1. peel potatoes, trim broccoli, cut onions, broccoli, and potatoes in medium size pieces . (nothing pretty b/c you will puree everything), In a large pot melt butter, over medium heat sauté onions until tender not brown approx 15min. If butter melts away add a little chicken broth. Once the onions are tender, add broccoli and potatoes and stir for 3 minutes. Add all chicken broth and bring to a boil. Reduce heat and simmer until all vegetables are tender. (app roc 45min) Add spinach and cook 1 more minute. Turn off flame and cool slightly approx 5 minutes. add salt and pepper to taste. Puree
