Broccoli Cornbread

Easy and great with soup.

  • 1 stick(s) butter
  • 6 ounce(s) cottage cheese
  • 4 eggs, beaten
  • 1 package(s) frozen chopped broccoli (thawed and drained)
  • 1 box(es) Jiffy cornbread muffin mix
  • 1 teaspoon(s) salt


  1. Melt butter in 9x13 pyrex dish or cast iron skillet. Set aside. Mix broccoli, cottage cheese, salt, and eggs. Add melted butter from pan to mixture, then add cornbread mix and stir till incorporated. Bake in a preheated oven at 425 degrees for 25-30 minutes.
