  • 2 apples, shredded
  • 1 teaspoon(s) baking powder
  • 2 teaspoon(s) baking soda
  • 1 cup(s) brown sugar
  • 1.5 cup(s) carrots, finely shredded
  • .5-1 cup(s) chopped nuts
  • 2 teaspoon(s) cinnamon
  • 2 eggs, beaten
  • 0.75 cup(s) Flaxseed meal
  • 1.5 cup(s) flour
  • 0.75 cup(s) milk
  • 0.75 cup(s) oat bran
  • 0.5 cup(s) raisins
  • 0.5 teaspoon(s) salt
  • 1 teaspoon(s) vanilla


  1. MIX: flour, flaxseed, oat bran, sugar, soda, powder, salt, and cinnamon in a large bowl

  2. STIR IN: carrots, apples, raisins, and nuts

  3. COMBINE: milk, eggs, and vanilla

  4. POUR: liquid ingredients into dry ingredients,

  5. STIR: until moistened. Do not over mix

  6. FILL: muffin cups.

  7. BAKE: 350 15-20 minutes or til done
