  • 2 tablespoon(s) balsamic vinegar
  • 2 clove(s) garlic minced
  • 1 teaspoon(s) sugar
  • 2 can(s) black eye peas drained
  • 2 plum tomatoes 1" pieces
  • 1 red pepper chopped
  • 1-2 jalapenos diced
  • 1 bulb(s) parsley chopped


  1. mix oil, vinegar garlic sugar s/p
  2. In bowl add remaining ingredients
  3. toss to coat
  4. serve room temp or refrigerate, serve cold
