Baked Pumpkin and Bacon Risotto

  • 4 rashers Bacon diced
  • 1 onion small dice
  • 1 cup(s) arborio rice
  • 2 1/2 cup(s) chicken or vegetable stock
  • 350g Jap pumpkin diced
  • 1/2 cup(s) parmesan cheese
  • salt and pepper


  1. Fry bacon, onion and pumpkin
  2. Add rice cook for 1 min
  3. Add hot stock, bring to the boil
  4. Transfer to a covered baking dish, cook at 190 C for 30 mins
  5. Stir in Parmesan, salt and pepper
