  1. Baked Creamed Spinach recipe

  2. Ingredients:
  3. 2 lb of fresh spinach.
  4. 1 ½ cups of hot milk.
  5. 1 cup of cheddar cheese, grated.
  6. 2 tablespoons of butter.
  7. 2 tablespoons of flour.
  8. 1 teaspoon of salt.
  9. Pinch of pepper.
  10. Pinch of nutmeg.

  11. Preparation Instructions:
  12. Trim and wash 2 lb of fresh spinach.

  13. Place in a suitably-sized pot with water still on the leaves.

  14. Cover; then cook only until wilted.

  15. Allow to cool, then squeeze out the excess water.

  16. In a saucepan, melt the butter; then add the flour.

  17. Whisk and gently cook for 3-4 minutes.

  18. Add the milk; then bring to a boil.

  19. Add the salt and a pinch of pepper and nutmeg.

  20. Cook for about 5-6 minutes.

  21. Combine the sauce with the spinach and ½ cup of grated cheese.

  22. Spoon into a baking dish, then top with the other ½ cup of grated cheddar.

  23. Bake at 375°F (190°C) for 20 minutes.

  24. Serve as desired.
