Baby Bella Mini Meatloaves

Ingredients

  • 6 to 8 ounce(s) Baby Bella mushrooms Roughly chopped
  • 1 Onion ( or equivalent diced frozen onions 1/4 cup or so) Minced
  • 2 clove(s) Garlic ( or 1/2 to 1 tsp of jarred minced garlic) Minced
  • 1 Egg Beaten
  • 1/4 cup(s) Skim milk
  • 1/4 cup(s) Oatmeal ( or 1 packet of regular instant oatmeal)
  • 1 teaspoon(s) Kosher salt
  • 1 teaspoon(s) Dried oregano
  • 1/2 teaspoon(s) Black pepper
  • 1 pound(s) Simple Truth Natural Ground Turkey
  • 1/4 cup(s) Ketchup
  • 6 teaspoon(s) Ketchup
  • Cooking spray

Preparation

  1. Preheat oven t0 375 degrees. Coat 6 cups of muffin tin with cooking spray. Sauté mushrooms and onions over medium high heat until liquid evaporates. Add garlice, and sauté for 30 seconds. Remove from heat; allow to cool. Mix egg, milk, oatmeal, salt and pepper; add turkey, oregano,1/4 cup ketchup and cooled mushroom mixture. Combine, but don't over mix. Portion into muffin cups. Spread1 tsp ketchup on top of each. Bake for approximately 20 minutes until the reach an internal temperature of 165 degrees. (They ooze some fat so good idea to set the muffin tin on baking sheet to catch drips. Also I cooked this 10/26/13. Might to improvise a mushroom wine glaze to use instead of using ketchup next time; cooked for about 25 min.)
