Avocado & Quinoa Salad

  • 2 avocado Chopped
  • 1 cup(s) Red quinoa
  • 1 Med tomato Chopped
  • 1/4 cup(s) red onions Diced
  • 2 Basil leaves Crushed
  • Dressing
  • 1/3 cup(s) Extra virgin olive oil
  • 1/4 teaspoon(s) Cayenne
  • 1 clove(s) Garlic Minced
  • 2 Limes Juiced
  • Sea salt & pepper To taste


  1. In a small saucepan, bring two cups of water to a boil add rinsed quinoa. Cover and simmer for 15-20 min. Cool and set aside. Mix dressing ingredients together in a small bowl. Mix all other ingredients in a large mixing bowl & then add cooled quinoa. Toss with dressing, chill serve.
