Anitas Lentil Chili

  1. 2 quarts water
  2. 1/2 lb dark lentils (not red)
  3. 1/2 chopped onion into 1/2 inch pieces
  4. 3-4 garlic cloves chopped
  5. 1, 14 oz can diced tomatoes undrained (can add 5-6 oil packed sun dried tomatoes)
  6. 1/2 cup olive oil
  7. 1 tbs oregano, chopped
  8. 1 tbs cumin
  9. 1 tbs red wine vinegar
  10. 1 tsp salt
  11. 3-4 chopped jalepenos

  12. sort and wash lentils, pour lentils onion and garlin into water in medium soup pot, add jalepenos
  13. simmer 1 1/2 hrs , stir occasionally
  14. add tomatoes, olive oil and salt, simmer 1 1/2 hrs
  15. add veniegar oregano and cumin, simmer 1 hr
  16. add more salt vinegar or seasoning to adjust, let sit
