Vermont Pancakes

We searched all over, asked everyone we knew, and tweaked this recipe until it was just right for us. Of course there are many ways to change it up, like adding chocolate chips or blueberries, and more!

  • Yield: 5 servings ( Serving Size: 3/4 )
  • Prep time: 5 Minutes
  • Cook time: 5 Minutes

  • 2 cup(s) Flour
  • 2 tablespoon(s) Sugar
  • 2 tablespoon(s) baking powder
  • 1/4 teaspoon(s) Salt
  • 2 Eggs
  • 2 cup(s) Milk
  • 4 tablespoon(s) Vegetable oil
  • 2 teaspoon(s) Vanilla

Mix dry ingredients in one big bowl and mix wet ingredients in a medium bowl. Slowly pour wet ingredients into the dry ingredients mixing with a whisk. Don't over mix, it's ok if it is lumpy. Use a 1/4 cup measuring cup to scoop onto griddle. On my electric griddle I put it on 375 degrees. Cook on first side until you see the top bubble. Flip once, do not keep flipping. Serve with real maple syrup, or stuffed with cream cheese and fresh strawberries.
