Preheat the broiler
Sprinkle the turkey with the salt and pepper. Heat the oil in a large ovenproof skillet over medium high heat. Add the turkey cutlets and cook until browned and cooked through, about 3 minutes on each side. Remove skillet from the heat.
Meanwhile, combine the nuts, cranberries, bread crumbs, and orange zest in a small bowl. Sprinkle the mixture evenly over each turkey cutlet, then top each with 1/2 T cheese. Place the skillet on the oven rack and broil until cheese is lightly browned, 1-2 minutes.
