Spun Off Chicken Cordon Bleu

This is a spin-off of chicken cordon bleu that's quick and easy.

  • 1-1/2 cup(s) bread crumbs
  • 4 chicken breasts
  • 1 egg
  • 2 tablespoon(s) french dijon mustard
  • 1/2 pound(s) shredded cheddar cheese
  • 1/2 pound(s) sliced deli ham cut into strips
  • 4 tablespoon(s) olive oil


Slice chicken breasts horizontally, but not quite all the way through

Mix dijon mustard, ham, and cheese in a bowl

Beat egg in a separate bowl

Place bread crumbs in a separate bowl

Heat olive oil in a skillet on high heat

Preheat oven to 400

Stuff ham/cheese/mustard mixture into each chicken breast

Holding the chicken breast "pocket" together, dip into beaten egg, then bread crumbs

Fry one side to a golden brown and place in a greased baking dish

Do the same for the remaining chicken breasts

Bake at 400 for about 20 minutes
