Pare apples and slice thin. Sprinkle with a little sugar and cinnamon. Mix together and set aside.
In seperate bowl beat the egg yolks, add sugar gradually beating until thick. Add lemon juice, rind and oil. Add to this mixture cake meal and salt beating at low speed.
Beat egg whites until stiff, fold into yolk mixture. Pour half of batter into 8 x 8 square pan, spread layer of apples. Cover with batter mixture that remains.
Bake at 350 degrees for 45 minutes or until done. Cool and cut into squares.
