Healthy Breakfast Cookies

Ingredients

  • 4 cup(s) oatmeal
  • 1 box(es) all bran cereal-original
  • 2 teaspoon(s) baking soda
  • 1 teaspoon(s) baking powder
  • 1 teaspoon(s) salt
  • 3 tablespoon(s) cinnamon
  • 1/5 teaspoon(s) nutmeg
  • 1 can(s) pumpkin
  • 6 eggs beaten
  • 1 cup(s) almond milk
  • 1 cup(s) craisins
  • 1 cup(s) raisins

Preparation

Combine eggs, almond milk and All-Bran in a mixing bowl and let stand until cereal softens - about 15 min. Add rest of ingredients and mix well. Dough will be very sticky. Drop by ice-cream scoop onto greased baking sheet and bake for 12-15 minutes at 350 degrees. These freeze well.
