Creamy Green Chili Chicken Enchiladas

Melt in your mouth creamy chicken enchiladas with green chilis. nothing but nothing but gooooooood!

Creamy Green Chili Chicken Enchiladas

shopping list

1 whole chicken

1 med yellow onion

1 clove of garlic

1 bunch of cilantro

1 bottle of cumin or smoked cumin

1 can of roasted green chilies

1 large can of green chilie enchilada sauce

1 package of philly cream cheese

1 bag of shredded 4 cheese mexican

1 bag of corn tortillas

1 Whole chicken roasted or pick up a rotisory chicken already cooked from the store

Let cool all the way to romm temp

Shred it up

set aside

1 med onion

1 can of diced roasted green chilies

1 whole clove of garlic

brown in a big skillet in a little bit of olive oil

add shredded chicken after about 7 min

salt and pepper and a little cumin or smoked cumin

add a little chopped cilantro when heated through

at the same time be heating up green chili enchilada sauce 1 large can

and a whole stick of philly cream cheese

heat on a med low heat DO NOT SCORCH BOTTOM

stir often

when melted all the way add a little 4 cheese mexican shredded

in a small pan heat some of the sauce and some oil

run corn totilla through until soft and pliable

wrap chicken up in the soft tortilla

place in baking dish with about a 4th of an inch in between them

top with shredded cheese

enchilada sauce and

more shredded cheese

bake on 400 untill cheese is all the way melted

serve with spanish rice and beans
