Chicken with Rice

Chicken with Rice

This is a great Mexican classic

Ingredients

  • 1/4c EV Olive oil
  • 1/3c Red sauce
  • 1 chicken (in parts)1ts Saffron (powdered)
  • 2 Small shallots chopped
  • 2 1/2 c broth
  • 1clove garlic
  • 1 c Uncooked rice

Preparation

Heat oil, saut chicken on both sides. Add onion and

garlic, then add tomato sauce, salt and pepper, saffron added to in chicken broth,

Cover and cook for 15 minutes. Add rice, cover and simmer for 20 minutes or

until chicken is tender.
