Bread and Butter Pickles #1

  • 12 med. cucumbers
  • 6 med. onions sliced
  • 2 green peppers, chopped
  • 3 cloves of garlic
  • 1/3 cup non-iodized salt
  • crushed ice
  • 10cups sugar
  • 6 cups cider vinegar (5% acidity)
  • 4 tablespoons mustard seed
  • 3 teaspoon ground termeric
  • 3teaspoon celery seed


Wash cucumbers and slice thinly. Combine cukes, onion, green peppers, garlic and salt in a large Dutch Oven. Cover with crushed ice, mix thoroughly and let stand 3 hours. Drain. Combine remaining ingredients and pour over cucumber mixture. Heat thoroughly, just until boiling. Pack while boiling into hot sterilized jars, leaving 1/2 in. headspace. Remove air bubbles, wipe jar rims. Cover at once with metal bands. Process jars in boiling water bath for 10 min.
