1/4 cup plus 2 tablespoons butter or margarine, softened
1 1/2 cups firmly packed brown sugar
1/4 cup plus 2 tablespoons whipping cream
2 teaspoons grated lemon rind
3 tablespoons lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1 unbaked (9-inch) pastry shell
1 tablespoon cornmeal
How to Make It
Cream butter and sugar; add eggs, one at a time, beating well after each addition. Add whipping cream, lemon rind, juice, cinnamon, and allspice; beat well. Pour filling into pastry shell. Sprinkle cornmeal evenly over top of filling. Bake at 300° for 45 minutes. Cool pie before slicing.
