- 2 tablespoons butter or margarine, softened
- 1 1/4 cups sugar
- 2 eggs
- 1/4 cup half-and-half
- 1 1/2 cups grated fresh coconut
- 9-Inch Pastry Shell
How to Make It
Cream butter; gradually add sugar, beating well. Add eggs, one at a time, beating well after each addition. Stir in half-and-half and coconut. Pour into pastry shell.
Bake at 300° for 55 minutes or until knife inserted comes out clean. Cool before chilling.
