Twice-Baked Cheesy Potatoes

  • 6 baking potatoes (2lb.), baked
  • 1-1/2 cups of Breakstone's or Knudsen sour cream
  • 4 green onions, chopped
  • 1 pkg. (6oz.) Fresh Take Cheddar Jack & Bacon Recipe Cheese Breadcrumb Mix, mixed together


  1. Heat oven to 375ºF
  2. Cut potatoes lengthwise in half; scoop out centers into large bowl, leaving 1/4-inch thick shells
  3. Place shells on baking sheet
  4. Add sour cream, onions, and 3/4 cup cheese mixture to potato flesh
  5. Mix well
  6. Spoon into shells
  7. Top with remaining cheese mixture
  8. Bake for 25 minutes, or until heated through
