How to Make It

Step 1

Heat oven to 375ºF

Step 2

Cut potatoes lengthwise in half; scoop out centers into large bowl, leaving 1/4-inch thick shells

Step 3

Place shells on baking sheet

Step 4

Add sour cream, onions, and 3/4 cup cheese mixture to potato flesh

Step 5

Mix well

Step 6

Spoon into shells

Step 7

Top with remaining cheese mixture

Step 8

Bake for 25 minutes, or until heated through
